I had my gall bladder removed (almost 10 years ago) and later realized I was gluten intolerant. I’ve met with many nutritionists and try to stay away from alcohol and anything greasy or fried… so I’m a pretty in to learning about health. I have SO much more energy, my stomach doesn’t hurt after meals and it just feels good to eat clean.
The very first thing I do in the morning is drink a bottle of water and a cup of coffee. (I keep the Starbucks unsweetened cold brew in my fridge.) Don’t talk to me until I have my coffee. LOL.
Here are my favorite healthy breakfast (or lunch) ideas right now:
1. Purple haze smoothie:
Blend spinach, blueberries, 1/2 banana, almond milk, protein powder and greek yogurt.
2. Green Juice and a Chocolate Sea Salt RX bar:
I usually get a fresh squeezed juice from the Juice Bar then have this bar.
3. Peanut Butter with Oatmeal:
Make plain oatmeal and top it with cinnamon, blueberries and a big scoop of peanut butter. This one is my favorite!
4. Egg White Omelet and fruit:
Use a nonstick spray to sauté whatever vegetables are already in the fridge. Once the vegetables are done add egg whites and season salt then cover until cooked. I usually have this with a side of salsa, avocado and fruit or apple chips.
5. Oatmeal with Greek Yogurt:
Heat 1/2 cup of water and 1/2 cup of oatmeal. Once cooked, stir in 1 Fage 0% Yogurt and agave sweetener. It tastes like dessert!
The outfit:
I fell in love with these Nike running shoes when training for the Austin half marathon this year, but they are also great for walking around town. The LunarGlide style fits me best because it is lightweight, has a good amount of cushioning and is made for neutral runners.
New workout clothes get me exciting in the morning and grabbing a hat before I run out the door is the easiest way to feel put together. I love the pop of light blue on these leggings for Spring!

What would I do without my fried food. Although I do try to substitute with better oils.
