Have been getting a lot of requests for a what I eat blog post and wanted to share a few of my favorite healthy meals and snacks. I try to eat around the same times every day, drink tons of water and never skip meals. I mostly avoid gluten, dairy and red meat.
Please remember, I am NOT a nutritionist – this is just an example schedule and the easy/clean meals and snacks that work for me!
Eating schedule and favorite healthy meals, snacks and desserts:
7AM Coffee – Coffee
9AM Breakfast – Smoothie
12PM Lunch – Oatmeal with peanut butter and fruit or green salad
3 PM Snack – fruit, avocado on gluten free crackers, granola, edamame, energy balls, carrots with hummus or popcorn
7PM Dinner – Grilled Salmon with brown rice and greens or gluten free pasta with roasted vegetables
Desert – Salted dark chocolate
Roasted brussels sprouts are one of our favorite sides. I just toss them with olive oil and sprinkle with season salt then cook in the oven at 450 for about 25 minutes.
Jovial brown rice pasta is our absolute favorite! It is gluten free and in my opinion tastes better than any other pasta! We usually roast tomatoes in olive and salt and use that as the sauce.
The Trader Joe’s lentil pasta is really good. The only ingredient is red lentils so it is high in protein and gluten free. I just add olive oil and salt.
I always have a snack at 3pm. This gluten free crisp bread is from Trader Joe’s and I just add avocado, salt, everything but the bagel seasoning and a little olive oil.
Granola is a perfect snack – my favorites are the Whole Foods blueberry and Purely Elizabeth chocolate sea salt.
This is one of my all time favorite healthy meals. Luke makes the best simple Salmon on the grill! He cooks it on a cedar plank from Whole Foods and adds lemon, rosemary and olive oil. This pairs really well with asparagus and brown rice.

Another favorite smoothie recipe! unsweetened vanilla almond milk, banana, spinach, frozen blueberries, cinnamon, ice and protein powder or greek yogurt.
I love to have oatmeal with peanut butter, cinnamon and fruit when I’m distance running and need more calories.
Spindrift has such good flavored sparkling waters. Perfect bars are great for an on the go breakfast or snack and I always bring them when traveling.
Edamame is a quick way to get protein and is so easy to make.
Eggs with Avocado and fruit or always good. I like eggs over easy or poached.
We love Halo Top ice cream- my favorite flavor is the dairy free chocolate.
