The perfect party drink! My friend Rachel and I decided to re-create our favorite brunch drink order for an upcoming holiday party! These are equal parts yummy and pretty to serve to guests upon arrival!
1 pint raspberries
3 tablespoons sugar
1 bottle of your favorite champagne
Place all but 8 raspberries in a blender with the juice of half a small lemon and the sugar. Blend until smooth. Pour puree through a fine mesh strainer to get rid of any seeds. (This part is optional). Place three spoonfuls of the puree in the bottom of a champagne glass. Place one of the raspberries in the bottom of the glass. Top with champagne. I like to serve mine with a raspberry on the side of the glass as well for décor. Enjoy!
