Have been getting a lot of requests for a what I eat blog post and wanted to share a few of my favorite healthy meals and snacks. I try to eat around the same times every day, drink tons of water and never skip meals. I mostly avoid gluten, dairy and red meat.
Please remember, I am NOT a nutritionist – this is just an example schedule and the easy/clean meals and snacks that work for me!
Eating schedule and favorite healthy meals, snacks and desserts:
7AM Coffee – Iced Americano or black coffee
9AM Breakfast – Green smoothie, fresh juice with eggs, avocado and fruit or a protein bar
12PM Lunch – Oatmeal with peanut butter and banana or green smoothie or green salad or vegetable bowl with edamame and brown rice
3 PM Snack – Protein Bar, avocado on gluten free crackers, dark chocolate, fruit, vanilla latte, Emmy’s Dark Cacao Macaroons or popcorn
7PM Dinner – Grilled Salmon with brown rice and greens or gluten free pasta or sweet potato with avocado and vegetables or spaghetti squash with roasted tomatoes and brussels sprouts.
Desert – Salted dark chocolate
I love this smoothie recipe: Spinach, banana, pea protein, cinnamon, ice and almond milk or water.
If I’m doing cardio, I like to have an empty stomach and eat after my workout. For weights, I have something to eat at least one hour before (usually a bar or smoothie) and one hour after. More on what I eat before and after workouts here.
The Trader Joe’s lentil pasta is my favorite. The only ingredient is red lentils so it is high in protein and gluten free. I just add olive oil and salt.
This is one of my all time favorite healthy meals. Luke makes the best simple Salmon on the grill! He cooks it on a cedar plank from Whole Foods and adds lemon, rosemary and olive oil. This pairs really well with asparagus and brown rice.
An iced coconut milk latte is my favorite Summer treat from Starbucks.
Another favorite smoothie recipe! unsweetened vanilla almond milk, banana, spinach, frozen blueberries, cinnamon, ice and protein powder
I love to have oatmeal with peanut butter, cinnamon and bananas when I’m distance running and need more calories.
Edamame is a quick way to get protein and is so easy to make.
Eggs with Avocado and fruit or always good. I like eggs over easy or poached.
We love Halo Top ice cream- my favorite flavor is the dairy free chocolate.
